A hospitality industry veteran, Jill Dobias has a proven track record of managing an array of unique and successful restaurants in and around New York City. As a seasoned restaurateur, Jill brings over a decade of experience in the hospitality industry to her new role as General Manager of Charlie Palmer Steak New York.
Jill studied dance at New York University’s Tisch School of the Arts and became a professional ballet dancer upon graduation. After retiring from the world of dance, she joined the hospitality industry where she quickly became an innovator and much respected operator, working to enhance all aspects of bar and restaurant operations at the outlets for which she worked. In 2011, Jill and her husband opened the highly lauded East Village restaurant, Joe & Misses Doe, where she oversaw all front of house operations. Her husband, Joe Dobias, was the restaurant’s Executive Chef and together the two garnered local and recognition from publications such as The New York Times, The New Yorker, New York Magazine, Men's Health, Travel + Leisure, Food & Wine, and the Michelin Guide.
Most recently, Jill spent a summer as the operations manager at Jean-George Vongerichten’s Fire Island restaurant, Le Dock. Now with Charlie Palmer Group, Jill brings her creative energy and passion for hospitality to Chef Charlie Palmer’s eponymous New York steakhouse. She currently resides in the West Village with her husband and their rescue dog Rina.
