A native of the Haute Savoie region of France, located just off the Swiss border, Charles Pouchot began his career in the restaurant business while still in high school working at local bistros throughout the area ski resorts of Megeve, Flaine, and Chamonix. Those experiences led him to continue his education at the Formation Hoteliere CFTH in Chambery, France where he pursued a degree in hospitality that was followed up by further certification from the Lycee Hotelier in Nice. Enjoying the French Mediterranean atmosphere, Charles stayed put in the area where he spent several years working for the two Michelin star restaurant La Chevre d’Or where he was eventually promoted to Assistant Maitre d’Hotel and was awarded the Trophee Jacquart award for best restaurant service in all of France in 1995.
Pouchot’s growing hospitality accolades caused master chef Daniel Boulud to take notice when Boulud recruited Charles to work for the Dinex Group. He moved to New York City where he spent ten years of his career rising through the ranks to the position of Assistant Director of Operations. In 2008, Chef Charlie Palmer plucked Pouchot to be the opening General Manager of the star chef’s new flagship location of Aureole at One Bryant Park. Naturally, Charles will lead the team at Charlie Palmer Steak NYC as General Manager. He now oversees all of the East Coast operations for the Charlie Palmer Collective, including the group’s six New York City, Rhinebeck, NY and DC locations.
